Roasted Beet Salad with Goat Cheese and Pecans withNewman’s Own® Balsamic Vinaigrette is a light, but flavorful salad that makes a perfect lunch or addition to your dinner table.

Roasted Beet Salad

I love roasted beets in salads. I know not everyone is on board with beets {myhusband} but I have always really liked them. I can eat them plain, but I especially enjoy them in a light salad. Today’sRoasted Beet Salad with Goat Cheese and Pecansmakes a really great light lunch salad or addition to your weeknight dinners.

The roasted beets pair with soft, creamy goat cheese, crunchy, sweet pecans and one of my favorite greens, arugula. The salad is topped off with Newman’s Own® Balsamic Vinaigrette, which is light but a great compliment to the salad.

You can use golden or red beets in this salad, either taste wonderful. I have also used walnuts instead of pecans which are a good addition, just less sweet. If you make this salad ahead of time I suggest you wait to put the dressing on until you are ready to eat, so the salad doesn’t wilt.

I make a big container of this salad and eat it for lunches during the week.It is nice to have something easy to eat when I am busy feeding my kids.
